A piece of advice first: when you’re building Gundams, be aware that there are different grades, so basically different difficulties. Once you’ve decided that you want to get into Gundam kits, an important step in picking your first model is understanding the Gunpla grade and scale system. If you’re a complete beginner, I suggest you start with Super Deformed Grade(Essentially “chibi” types of Gundams), or High Grade. This video teaches a build about Master Grade, which is the second hardest type. So in comparison:
