I chose to prepare this creamy pesto sauce because I saw it in one of your videos and I had never made pesto before so I decided to give it a go. I also had a lot of basil because our plant had fully grown back so it was another thing that convinced me to make this. I did have to make a couple changes to the recipe one of them being that instead of using cashews as a replacement to the original nut, pine nuts, you are supposed to use for pesto, I had to use spicy lime cashews cause we didn’t have plaine. In the end these spicy cashews made the pesto delicious with a little bit of a spice kick to it that I really enjoyed. I think when I make this again I will chose to use these cashews because It was fabulous. Instead of just putting the pesto on some pasta, I decided to add It to a creamy white sauce recipe from my aunt. This was a really good idea and I think it made it really delicious. It was a little bit thick to start off because there was lots of cheese in the white sauce but I added some cream and it thinned out. The cheese in the sauce did not take away from the flavour in fact it made it very good. This is definitely something I will be cooking again in the near futur for me and my family because everyone enjoyed it. It is also a great way to use up our basil.
